Demetri Pappas, Executive Chef of Café Fresko, started Café Fresko in December of 2003. Demetri’s love of food began as a young child while he often watched and helped his mother prepare Greek dishes, and worked with his father in the family restaurant.
Demetri honed his skill while attending the Restaurant School at Walnut Hill College in Philadelphia, PA, where he graduated in 2002. While attending culinary school Demetri was at the top of his class and was apart of the school’s culinary team that competed against other culinary teams in the nation, and trained under the region’s top chefs. In addition he also traveled to France while in culinary school where he trained and continued to develop his culinary talent.
After graduating from culinary school Demetri took his passion for food to the next level by opening Café Fresko with his parents, Nick and Georgia. As Executive Chef of Café Fresko, Demetri creates dishes that are a fusion of his French culinary training and Greek heritage. Demetri incorporates staple ingredients of Greece into his cooking, which enhances and refines typical Greek dishes thus making them more sophisticated.
Demetri uses local and specialty meat and fish purveyors that supply him with the finest naturally raised products. He also hands picks his produce daily at local suppliers. Demetri’s passion for cooking continues to grow stronger every day, and he is constantly inventing new dishes and coming up with new way to keep his customers coming back for more. Come into Café Fresko any Monday through Saturday and you will be sure to be pleased after enjoying one of his culinary masterpieces. |
